The freeze drying process.

The process of freeze drying is almost magical! The freeze dryer chills to -20 or lower, then, in an airtight chamber, creates a vacuum environment to as low as 250 millitorr. Any moisture that is in the candy is pulled out through sublimation. Sublimation is the process in which ice goes straight to vapor, skipping the liquid state altogether. As this occurs, the candy expands and often changes texture, size, and taste. It’s an amazing process!
